Once upon a time, two sisters visited a chocolate shop in Washington DC. They fell under the confectionery spell, and started to dream of owning their own store. Well, first they dreamed of a bakery, then one of the sisters went to culinary school, realized she loved chocolate more than pastries, THEN they dreamed of a chocolate shop.
Lucky for us here in Huntsville, (and especially those of us here at Lowe Mill) their dream became a reality when they opened the doors to Pizzelle’s Confections, located in Railroad Car #4 at Lowe Mill Arts and Entertainment.
The sisters, Michelle Novosel and Caitlin Lyon, moved here from Pennsylvania twenty years ago and have fond memories of homemade pizzelles which inspired the name of their business. A pizzelle is an Italian anise flavored cookie, by the way, and Michelle says it’s a flavor of childhood. One of their goals is to make a visit to their shoppe (which truly deserves the spelling “shoppe”) an experience for all the senses and one that will create memories for you and your children.
Chocolate Done Right
The chocolates are made right there in the shoppe, and the process can take a few days. Michelle, who is a certified Chocolatier, showed me the process of melting (tempering) the chocolate, then pouring it into the individual molds, which must then set, after which they are filled with incredible and sometimes surprising ingredients, then set again, then are painted.
Yes, I said painted.
Hand painted or airbrushed.
The menu changes, as they are constantly creating new works of art for us to enjoy, though there are their signature treats that remain on the menu. I asked how they came up with the designs, and Michelle answered that they try to imagine what the taste should look like.
Chocolate is a medium for them, so they spend hours thinking of new designs, testing them and even coming up with creative names for them. This is art, people. Edible art.
In addition to the incredible confections, they offer drinking chocolate.

This is chocolate you drink….and OMG, I had no idea it could taste like that! Seriously, my taste buds were like, “Why have you been teasing us all these years with chocolate tasting water. THIS is how it should be”. And if that were not enough, they make the marshmallows. I confess, I have never given marshmallows much thought, until now.
This summer they will be adding fresh fruit to the mix. Wow, I can only imagine how beautiful that will be.
A Tasty Gift
Fellas (and ladies) do you need a gift for a lady in your life? Perhaps your wife’s birthday is coming up? Or your anniversary? I’m not telling you what to do, but if you are a smart, you’ll visit Pizzelle’s Confections and buy a treat for your lady. Because chocolate always makes a terrific gift (or addition to a gift).
Guys, the chocolates come in small boxes….they look like jewelry boxes. This could be an opportunity to do a test run on how your girl friend reacts to small boxes. Married guys, this could be a good opportunity to gain some MAJOR bonus points, without breaking a $20. I’m just sayin…
