Downtown Huntsville has recently decided to participate in the growing food truck frenzy that is sweeping the Tennessee Valley. Thursday through Saturday night, food trucks can park and sell their wares in the midst of the historic district, hoping to give barflies and strollers a fast food fix. ( Too many F’s?). During one of these food truck weekends, I got a chance to snap some photos and learn more about a few of the trucks parked in the entertainment district.
Downtown Huntsville Food Truck #1:
Food Fighters Bustarant
Owner: Jason Lafferty
The History: Jason bought the bus with the intention of flipping for profit as a recreational camper, a concert limo, or a food truck. The food truck idea won out and he headed from Huntsville to start his business.
The Vehicle: The Bustaurant is a full-size school bus decked out in lights
The Food: Food Fighters Bustarant specializes in sandwiches, tacos, and salads. The tacos are a hands-down favorite, and are made up of marinated roast beef, grilled with queso blanco, and are topped with local pico de gallo, siracha sauce and “magic bus” sauce.
Find Food Fighters: They’ve taken up residence downtown Thursday-Saturday, parking across from Lone Goose Saloon from 9 pm-2 am, and the first two Wednesdays of the month at Straight to Ale Brewery. As far as future plans go, keep your eyes peeled to spot the big yellow bus on the Redstone Arsenal.

Downtown Huntsville Food Truck #2:
Sugar Belle aka The Cupcake Truck
Owners: Andrew Judge and Lee Judge
The History: Andrew and Lee bought the former Army/White House Communications Agency truck after spotting it for sale in the former Books A Million parking lot in August of 2012. Originally planning on making and selling elaborate cakes out of it, they decided to downsize the idea for cupcakes, and hopped on the food truck craze.
The Vehicle: The Cupcake Truck is a white and pink truck truck with a giant smiling cupcake
The Food: Cupcakes of course! Best sellers include:Peanut Butter Chocolate, Red Velvet, Mint Julep, and Strawberry.
What’s Next: The future of Sugar Belle, Inc looks very sweet indeed, as the judges plan to add gluten, sugar-free, and dairy-free cupcakes to the menu, and expand the list of desserts to include French Macaroons, brownies, and mini pies.

Downtown Huntsville Food Truck #3:
Crave Snow Cones
Owners: Priscilla and Armando Guerrero
History: The Guerreros decided to go into the food truck business shortly after moving to Huntsville from Dallas, Texas. Wife Priscilla had pregnancy cravings for sno cones in the past, but after living for three years in Huntsville without any sno cones, the Guerreros decided to purchase one for themselves in August 2012 to help stay cool in the summer months.
The Vehicle: A bright green truck with a light up crave sign
The Food: Crave Sno Cones also sells nachos, hotdogs, and chips and (slightly spicy) homemade salsa. But the main attraction is Sno Cones. Crave offers a variety of flavors. Its favorites include cake batter flavors with marshmallow topping, fruit flavors such as Sour Cherry, and Armando’s favorite Tamarindo.
The Future: In the future the Guerreros hope to keep a sno cone truck in Huntsville permanently while also building a fan base in Hazel Green.
Find Crave: During the hot summer months Crave can be spotted at Concerts on the Dock at Lowe Mill, and on weekend nights downtown. They are also available for charity events, block parties, and weddings.

Downtown Huntsville Food Truck #4:
East Texas Pit BBQ
The History: Donnie started his Pit BBQ business in Huntsville in 2006, after shipping his beloved BBQ Pit, named Kitty, from Eastern Texas. As a seasoned owner/operator of BBQ joints, Donnie decided to use a food truck to help promote the opening of his new restaurant, The Son’s Zone.
The Food: Offering classics such as Beef Brisket, Beef Ribs, and Pull Pork, East Texas Pit also rounds out the menu with items like Pork Ribs, Chicken, Links, and Hot Dogs. The meat is served hot, smoky, and with the melt-in-your-mouth quality that is surprisingly rare with BBQ restaurants, with Beef Brisket being the hands-down favorite.
Find East Texas Pit BBQ: The truck can be spotted downtown on Clinton and Washington Thursday-Sat from 9-2, and as far as far as future plans for the business, he has decided to keep it simple: continue to provide good food.
