It’s not officially summer yet, but it feels like it and the local food trucks are out and about.
We LOVE food trucks because we feel they bring creativity to the food scene that is otherwise sometimes difficult to come across in Huntsville.
Here are six of our favorites:

Beast Mode
You guys. There’s guac on their veggie burger so you know it’s going to be a winner in our book. We’ve also tried their special Salmon Burger on New Year’s Eve, and that was incredible too. The best part is picking a side. We always opt for the “side of the day” and are thrilled when it’s the French Mac and Cheese.
Back Alley Traveling Bistro
Goat in the Garden and the Kitchen Sink Loaded Waffle Fries are our go-to menu items at Back Alley. Anytime there’s goat cheese on the menu, we must have it! And who doesn’t love fries topped with chili, several types of cheese, and pickled jalapenos?
Manic Organic
Try the Calabacitas Tacos for lunch and their Calabacitas Egg Drop Sandwich they’re serving up for Breakfast on the Square every 2nd, 3rd, and 4th Saturday of the month. Their scratch made blueberry muffins are killer too!
Pearl
Sesame chicken, fried rice, crab rangoon. ALL the good stuff! You can also go the route of noodles instead of rice or an egg roll instead of crab rangoon.
I Love Bacon
If there’s one food truck that everyone knows in Huntsville, it’s gotta be I Love Bacon. Did you know they also have a food truck in Birmingham and a spot inside Mae’s Food Hall in Cullman? For a delicious combination of mac and cheese and bacon, we recommend the Notorious B.I.G.
Fire & Spice
Since Fire & Spice opened up their restaurant we have been finding ourselves there a lot, but their food truck is still a solid option as you can find them at The Battle of the Food Truck All-Stars as well as the NASA Food Truck Corral for lunch. And if you can catch their breakfast at any point, we highly recommend it!
